Tabatchnick Recipes – Simmered Salmon with Basil and Veggies

2 tablespoon butter or margarine
2 cups mixed cut-up fresh peppers and onions
1 medium zucchini, cut into julienne (matchstick-size) strips
4 salmon fillets (4 to 5 oz each) or 1 large salmon
2 tablespoons chopped fresh basil leaves
1/2 teaspoon seasoned salt
1 teaspoon lemon juice
3/4 cup Tabatchnick chicken broth (from 32-oz carton)

Step 1: Preheat oven to 325 degrees Fahrenheit
Step 2: In a large fry pan, melt butter over medium heat. Add bell peppers and onions. Cook and stir 5 minutes. Stir in zucchini.
Step 3: In a shallow baking pan arrange vegetable mixture. Place salmon, skin side down, in baking pan. Sprinkle salmon and vegetables with basil, seasoned salt and lemon juice. Pour broth over salmon and vegetables.
Step 4: Cover and cook at 325 degrees Fahrenheit for 30 minutes. Test with cooking thermometer. Internal temperature should be 145 degrees Fahrenheit when done.
